Corn Relish Salad

Save your last bits of summer produce for this salad that is fit for the October Indian Summer. And by using Classic Country Foods Corn Relish you can enjoy the taste summer even longer!

1 cup Classic Country Foods Corn Relish
1 cup halved cherry tomatoes
1 small cucumber, diced
¼ cup red onion, diced
2 tablespoons mayonnaise (more to taste)
½ teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper
¼ cup julienned fresh basil
Red leaf lettuce

In a separate bowl mix together Classic Country Foods Corn Relish, cherry tomatoes, diced cucumber and diced onion.
Stir in mayonnaise to taste then season with salt and pepper. Chill for at least an hour. While the corn mixture is chilling line a serving bowl with red leaf lettuce leaves and set aside. After chilling the corn mixture toss with basil right before scooping into lettuce lined serving bowl.
