Brunch French Toast with Orange Syrup

Ingredients are kid approved and the orange syrup adds sophistication for the adults at the brunch table.  

Makes 6 slices of French Toast.  Increase recipe proportionally for French Toast or Orange Syrup if you have more people to serve. 

Ingredients

Brunch French Toast

6 slices Texas Toast white bread (slightly dry, day old better)

3 cups Captain Crunch Cereal (original flavor) crushed

3 eggs lightly beaten

3 tablespoons Heavy Cream

1 stick butter for frying

Orange Syrup

1 cup light corn syrup

½ cup Classic Country Foods Orange Marmalade

Brunch French Toast

  • Set bread out ahead of time to get slightly dry on outside. A wire rack on a pan is perfect and can be used to keep French Toast warm in the oven till serving.
  • Put Captain Crunch Cereal in a zip lock bag and use a rolling pin to crunch into crumbs. 
  • Lightly beat the eggs and then add the heavy cream – just to combine. 
  • Put some of egg and cream mixture in a bowl large enough to accommodate one slice of bread.  Add more of mixture as needed.
  •  Put some crushed cereal in a flat pan or plate with sides. As you work through the slices of bread you will add more of the cereal crumbs to your pan.
  •  Dip both sides of the bread in the egg mixture, then over to the cereal crumbs.  Make sure both sides are coated with the crumbs.  If necessary, use finger to pat crumbs on places that need additional covered. 
  • Place coated pieces on the wire rack to have ready for frying.  
  •  Put several pats  of butter in the frying pan and melt.  Bring heat on pan to medium, but do not allow butter to burn. Have additional butter ready, as you will probably need to add more as you continue frying the pieces. 
  • Start frying coated bread, one piece at a time.  Check bottom and flip when slightly tan.  You can flip between the sides until you get the color that you want.  When done, remove finished French Toast to wire rack and place in warming oven while you fry the rest, adding the new pieces as you go along.  

Orange Syrup

  •  In a small sauce pan over low heat stir together 1 cup light corn syrup and ½ cup Orange Marmalade.  Stir over heat until incorporated and texture is smooth.  It does not need to boil.  Cool slightly before using on French Toast.  Can be made in advance and stored in refrigerator.  Bring to room temperature before warming.
